Whip up a nutritious and delicious egg stir-fry with these ingredients to delight your family on an autumn day
Not everyone knows that black beans are a high-nutrition food because they contain many unsaturated fatty acids, protein, vitamin A, fiber, calcium, potassium… so they are very good for health.
Especially, with just a few simple steps, you can easily make black bean sprouts at home and cook a quick stir-fried black bean sprout omelette according to the following recipe.
1. Ingredients for stir-fried black bean sprout omelette
– Black bean sprouts: about 200 grams
– Eggs: 3
– Ginger, scallion, garlic
– Cornstarch
– Red chili
– Seasonings: Soy sauce, cooking oil, oyster sauce
2. How to make stir-fried black bean sprout omelette
Step 1: Prepare the ingredients
– After buying black bean sprouts, remove the black roots that have sprouted. Then rinse with clean water and remove any remaining black skins.
– Remove any damaged or withered leaves from the scallions, rinse and chop them finely.
– Peel the garlic, rinse with water and mince.
– Rinse the chili, remove the stem and cut into diagonal slices.
– Peel the ginger, rinse with water and chop finely.
– Mix 1 tablespoon of cornstarch with 2 tablespoons of water in a bowl and stir well.
Step 2: Fry the eggs
– Beat the eggs in a small bowl and stir well.
– Add the cornstarch mixture to the beaten eggs and mix with a spoon or chopsticks.
– Place a pan on the stove, add a little cooking oil and slowly pour the beaten eggs into the pan to fry until golden on both sides.
– When the eggs are cooked, remove them from the pan and cut them into long strips.
Step 3: Stir-fry the black bean sprouts and eggs
– Continue using the same pan used to fry the eggs, heat up some oil. Then add the chopped scallions, garlic, ginger, and chili and stir-fry.
– When you smell the aromatic fragrance, add the black bean sprouts and stir-fry quickly over high heat for about 10 seconds.
– Wait until the black bean sprouts start to soften, then add the chopped eggs and stir-fry together.
– Season the stir-fry with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and ½ teaspoon of salt.
– To speed up the cooking process, you can add a little water to the pan and stir-fry for another round, then turn off the heat.
After the stir-fried black bean sprout omelette is cooked, it will have an extremely attractive color with bright yellow from the eggs and refreshing green from the bean sprouts. When eaten, you will feel the rich and fatty taste of the eggs combined with the refreshing taste of the bean sprouts.
3. Notes when making stir-fried black bean sprout omelette
– When stir-frying the black bean sprouts, you should stir quickly to help them cook quickly and maintain their characteristic crispness.
– To make the eggs chewy and have a better appearance when frying, you can add a little cornstarch or tapioca starch when you whisk them.
– It is not recommended to eat cold stir-fried black bean sprout omelette as they will lose their aroma and become fishy. Moreover, if left for too long, the bean sprouts will lose their crispness and sweetness. Therefore, it is best to enjoy this dish while it is still warm.
– Depending on personal preference, you can also add five-spice powder, ground pepper, or curry powder and mix them with the beaten eggs before frying.
– To ensure food safety, you can grow black bean sprouts at home. However, only take a sufficient amount as if you take too much, the bean sprouts may become dark and wilt quickly, becoming unappetizing.
